Comet Corn!
Today, we want to thank one of Sonoma County’s delicious food purveyors! Comet Corn, Sonoma’s favorite popcorn treat, was so generous to donate hundreds of bags to feed the healthcare workers on the frontline at Sutter Santa Rosa Regional Hospital.
Chef Heather’s Chicken Parmesan
4 ea Boneless/skinless chicken breasts 4 oz each
2 T Olive oil
Salt and pepper
1 T Lemon juice
2 cloves Garlic
Handful Parsley
1 cup Marinara sauce
¾ c. Shredded mozzarella cheese
Preheat oven to 350 degrees. Process oil, salt and pepper, lemon juice, garlic, and parsley in a blender until finely chopped. Pour over chicken. Place chicken on lined baking sheet. Bake until chicken reaches an internal temperature of 165 degrees. Remove from oven. Top each breast with a spoonful of marinara sauce and shredded mozzarella. Return to oven until cheese is melted and bubbling.
Serve with pasta and vegetables.
